Ingredients
  

🥩 Meatloaf Mix:

  • 2 lbs ground beef (85/15)
  • 1 cup breadcrumbs (or crushed crackers)
  • 2 large eggs
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon smoked paprika (optional)
  • ½ teaspoon salt
  • ½ teaspoon black pepper

🧅 Veggie Saute:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced

🧀 Cheese Filling:

  • 6–8 slices provolone cheese (or mozzarella)

Instructions
 

Step 1 – Prep the Veggies:

  • Heat olive oil in a skillet over medium heat.
  • Sauté diced onion and bell pepper for 4–5 minutes until soft.
  • Add garlic and cook for 1 more minute.
  • Remove from heat and let cool.

Step 2 – Mix the Meatloaf:

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground beef, breadcrumbs, milk, eggs, Worcestershire, seasoning, and cooled veggies.
  • Mix gently with hands or fork until just combined—do not overmix.

Step 3 – Shape and Fill:

  • On a lined baking sheet, form half the meat mixture into a flat oval.
  • Lay provolone slices in the center, leaving space at the edges.
  • Cover with the remaining meat mixture, shaping into a loaf and sealing edges.

Step 4 – Bake:

  • Optional: Spread Cheese Whiz on top.
  • Tent loosely with foil and bake for 30 minutes.
  • Remove foil and bake another 20–25 minutes, or until internal temp reaches 160°F (71°C).
  • Let rest for 10 minutes before slicing.

Notes

For the best flavor and texture, use freshly sautéed veggies and full-fat ground beef (85/15). Be careful not to overmix the meat mixture—doing so can make the meatloaf dense. Let the loaf rest for at least 10 minutes after baking to allow juices to redistribute and make slicing easier. Customize the cheese or toppings based on your favorite cheesesteak style—provolone for classic, Cheese Whiz for authentic Philly, or pepper jack for a spicy twist!
