For the Tacos:
- 8 small small corn tortillas
- 1 lb ground beef or shredded chicken
- 1 small 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp cumin
- Salt and pepper, to taste
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- Vegetable or canola oil (for frying)
Optional Fillings:
- Refried beans (to spread inside)
- Jalapeños, diced green chiles, or hot sauce for heat
Toppings:
- Shredded lettuce
- Sour cream or crema
- Salsa or pico de gallo
- Avocado or guacamole
- Crumbled queso fresco

1. Cook the Filling:
In a skillet over medium heat, cook the ground beef with onion and garlic until browned.
Season with chili powder, cumin, salt, and pepper.
Stir in shredded cheese and mix until melted. Remove from heat.
4. Fry the Tacos:
Heat about ½ inch of oil in a skillet over medium-high heat.
Fry tacos 2–3 at a time, 2–3 minutes per side, until golden and crispy.
Drain on paper towels.
